One thing that I did really love about the enchilada bake was the taste of the rotisserie chicken. Inside the bake there were corn tortillas, rotisserie chicken, pinto beans and corn. It was topped with shredded cheddar cheese and had some diced bell peppers on the top. I can now tell you that this doesn’t include rolled up enchiladas, but it is a casserole style bake with the enchilada ingredients piled in layers. This is exactly how I make my enchiladas at home too. Luckily most of the sauce was right on top of the bake, above the corn tortillas, so I just took the top layer of tortillas and sauce off to be able to eat the rest of the bake. Before trying this, I wasn’t sure if it was rolled up enchiladas or a casserole style. First the sauce was very spicy and just didn’t taste good at all. While the enchilada bake from Costo looked so good, sadly it didn’t taste as good. The main thing that I didn’t like about it was the flavor of the sauce. It looked really good and I couldn’t wait to try it. Here is what it looked like when it was done cooking. I uncovered the enchilada bake and put it back in the oven for about 3 minutes. This is not required, there was just some unmelted cheese on the top of the bake and I wanted to brown it up just a bit. After 50 minutes, I checked the internal temperature and it was already up to 165 degrees. I followed the cooking instructions exactly. I cooked my enchilada bake in the oven at 400 degrees for 50 minutes. Place on a baking sheet in the center of the oven and bake for 50-60 minutes or until the internal temperature reaches 165 F. Remove the lid and then loosely cover with foil. The cooking instructions for the Costco enchilada bake state that you should preheat the oven to 400 F. It comes in a tin container that is covered with a plastic lid and it is ready to bake. The Enchilada Bake at Costco is found in the deli section with the other premade Costco meals. There were some things that I did like about it and some things that I didn’t. ![]() However, just because I didn’t love it doesn’t mean that you won’t. My expectations were high, and I wanted to love this, but sadly to say this is one thing from Costco that I didn’t really enjoy. ![]() I actually love making enchiladas at home, but when I spotted the Costco Chicken Enchilada Bake I knew that I needed to try it.
